Using 1/2 cup of water is not that much with this much vegetable and eggplant is not one of those vegetables that release a lot of water. So I don't thin you'll need to 'save' anything. But if you're still worried, you can try adding 1/3 cup or 1/4 cup water and cook it on low.Burcuhttps://www.blogger.com/profile/03291775178560434313noreply@blogger.comtag:blogger.com,1999:blog-32011247.post-34442582275694984682008-10-01T16:26:00.000-07:002008-10-01T16:26:00.000-07:00wow this dish looks so good!!!!!! The vegetables probably also release a lot of their water into the pot when cooking so does adding extra water in the beginning dilute the taste of the dish? I'm always afraid of doing that so if that happens when I cook it, how can I "save" it? - New cook on the block =)Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-32011247.post-3277737898675927302007-10-24T12:13:00.000-07:002007-10-24T12:13:00.000-07:00Very nice! Of course, when it comes to good food, I always find a way! The oil would be wonderful in your dish, and as an eggplant lover, I can't wait to try it!Susan from Food Bloggahttps://www.blogger.com/profile/11034518858688958369noreply@blogger.comtag:blogger.com,1999:blog-32011247.post-54550432360197525302007-10-16T11:29:00.000-07:002007-10-16T11:29:00.000-07:00I remember the first time I heard the name of this...I remember the first time I heard the name of this dish -- "the priest fainted" -- I thought it meant that he fainted from delight, which is how I felt when I tasted it! My favorite way of cooking eggplant is always and always deep frying and then covering it with a garlicy tomato or yogurt sauce. hmmmm

Peter, I've always wondered; what do you call it in Greek?Burcuhttps://www.blogger.com/profile/03291775178560434313noreply@blogger.comtag:blogger.com,1999:blog-32011247.post-91570654077011201432007-10-14T09:26:00.000-07:002007-10-14T09:26:00.000-07:00Burcu, your Imam looks delicious. You must be a biiiiig fan, just like me. I just posted ratatouille recipe, looks very similar to yours, btw. (at least in the baking tray). I bet you will be surprised to hear that I voted for eggplant for my favorite veggie! I'm really getting to love it since I grew them in my garden this year.
